I don't play any instruments but even I could hear a difference between the two guitars. Not s $4850 difference, but a difference.

Fuller and less abrasive.
My dad collects guitars. You can hear the sound difference better in person. I think it's a more clear and clean sound, and even a ring when compared.

Playability and accuracy of the intonation are big factors as well.

Definitely the Martin has better sustain and tone. He should have recorded both in the same seating position though, the room sound could easily be different for either location.. I went from a $100 acoustic to a $5000 Morgan ( local hand made beauty ) and the difference was even more dramatic. My old camping guitar sounds half dead even with new strings.. The new one resonates in my hands while playing, it's a real treat.. Beyond about $1000 most acoustics are just fine, and even some lower cost ones are very usable. You start paying for the better wood, better parts and of course branding..
As with so many things, the sound and playability of guitars is subject to diminishing returns. I went out at one pount set to spend $2500 on a specific acoustic guitar and came home with a $600 one that I thought sounded and played better.

Seagull sells the best guitars I've found under $700.
Tony Maguire The one I got that I mentioned before was a higher end Cort. It's still my favourite acoustic guitar to play. I recently bought a Seagull 12 string and it's a wonderful instrument.

I actually just came back from buying my very first real Stratocaster, a Plus Top in antique sunburst. It's gorgeous. It's set up with 12's right now, so I can't comment quite yet on the playability, but it sure sounds nice.

Douglas McMillan 12's ? Ooch my fingers! ;)
Gord Wait It's not that bad, I have pretty strong fingers from playing acoustic, but yeah, most of my electrics are 9's or 10's. I'll probably South out over, add I want to list the action a bit add well. I think the previous owner really hated any buzz at all.
