I don't suppose someone can explain "C," "K," and "U" to me. I've had these tires in the past but the shop owner just ordered the ones he thought was right for my bike (SV1000s). Is there really a difference?

It's the tire speed rating. Here is a quick link to the different ratings.

Some tyres also have a slightly different profile as OEM.
I'm going with U-turn rated, C-ruising rated, & K-razy rated. Haha!! $$
